Spinach and Feta Cakes

INGREDIENTS:
3 medium desiree potatoes
1 egg
1 Tbspn flour
1/4 tspn sea salt and pepper
2 garlic chopped gloves finely
1 shallot chopped finely
2 Tbspn grated parmesan cheese
70g baby spinach leaves chopped
100g finrly diced feta
few finely sliced basil leaves or chilli
coconut or macadamia oil for frying







METHOD:
1. Peel and cook pogatoes in water
until tender but firm.
2.Dice potatoes and combine with
remaining ingredients in a bowl.
Mix but do not mash.
3. Divide mixture into12 and shape
into small patties. Flatten slightly.
4. Heat oil for frying, add cakes in
batches. Cook on both sides until
golden. Drain on paper and serve.





ALTERNATE SUGGESTIONS:
May need a little extra flour
