ORANGE CAKE

INGREDIENTS:
2 organic oranges
1 cup of rice malt syrup (or sugar)
1 tspn ground cloves or vanilla
6 eggs
150g almond meal
100g flax flour or brown rice flour
1 tspn baking powder




METHOD:
1. Wash oranges and simmer whole
in water for 2 hours, leave to cool.
Then puree the whole orange.
2. Preheat oven to 160 degrees.
3. Beat eggs and sugar, stir in
orange puree then dry ingredients.
4. Pour into a 20cm round greased
and lined cake tin and cook for 1
to 11/2 hours until golden brown.
5. Or cook in silicone muffin cups
for 25-30 minutes until golden
brown.







ALTERNATE SUGGESTIONS:
Have not cooked yet so the rice malt syrup is a substitute, may need a little more almond meal.
Instead of flax flour any gluten free flour should work.
